OK, another break in the African series of blogs but I have had A LOT of people ask me for my Tomato Pie recipe, so I am going to post it. I was going to wait till I had fresh tomatoes to take pictures of it, but I am going to post it now and maybe I will post it again. It is one of my FAVORITE dishes!! Maybe even my favorite Dish! This is AMAZING!!! You have to try it! I know it sounds a little gross and I thought so too. I actually had the recipe for 4 years before actually trying it and BOY I AM ADDICTED!!! I actually made it one week when Keith was gone to some training, just in case it turned out bad then he would never know I wasted tomatoes on something gross. (IN Galena tomatoes or any fresh fruit or Veggie is precious and not something you waste) But I made it and he came home the next day and I made it for dinner telling him " YOU HAVE TO TRY THIS!!" He was like me a little hesitant, but the minute he tried it, he closed his eyes and just savored the first bite! We then had it 4 other times that week! YES it was that good and what better way to put a dent in your tomato supply after you have 20 pounds after the first frost. TOMATO PIE! It truly is amazing! And SUPER EASY to make. I got this recipe from a friend in Florida but adapted it due to Kaden's allergy to eggs, But I am so glad I did because the new version, I think is much better. I am not big on mayonnaise and since it has eggs I changed it to Sour cream! Even Keith agrees that with sour cream is better. So I will post it how I make it, not the original recipe. This summer when we have more fresh veggies I may venture out and put some more stuff in it but why mess with a great thing? Here is my Tomato Pie. Try it You won't be sorry! TRUST ME!! TRY IT!!
Tabby's Tomato Pie (this makes one pie but I would say make 2 because this will be gone before you can even take a picture! Trust me I have yet to get a picture of a tomato pie after it is cooked! It is devoured fast!)
Ingredients:
1 pie crust
2 large Tomatoes
oregano
Pepper
Salt
1 cup Sour Cream
1 cup Cheddar Cheese shredded
1 cup Mozzerella Cheese shredded
Crispy Bacon, or Bacon Bits, or Pepperoni ( this is something I change due to what i have on hand)
Preheat 350 degrees. Roll out the pie crust and place it in the pie pan. I bake my crust about 10 minutes to keep it from getting soggy later. Cut the tomatoes in thin slices and place in one of those strainer/drainer things. Not sure the name but the thing you pour your macaroni and pasta in to drain all the water out. Put your tomatoes in there to drain off access juice. Let drain about 10 minutes sprinkle salt, Pepper and Oregano over the tomatoes to season them. Then layer the tomatoes in the pie crust. Sprinkle Bacon around over top of the tomatoes. Mix Sour Cream, and Cheeses together in a separate bowl and then spread on top of the tomatoes. Bake it 40-60 minutes till top is getting brown. Take it out and for best results let it sit for about 15 minutes to be able to cut it better and not have it run all over the pan. But SELDOM ever does it make it 15 minutes at my house. But it does cut better like a pie if you wait more then 15 minutes.
*This is my favorite version of the pie, but you can add more stuff if you like. Mushrooms, onions, Peppers. Basically let you mind and tastes buds lead you. =) ENJOY!!!!!! Let me know how you like it!
