Last night was one of those nights that I really didn't feel like cooking a "Main" meal. I didn't feel like eating roast, chicken or any other normal supper option. I was very hungry for breakfast! So when Keith told me he invited Karin and Ida over for dinner I told him we were having Pumpkin pie pancakes! I LOVE these pancakes. If you haven't notice pumpkin is one of my favorite ingredients to make stuff out of and who needs IHOP when you can create your own supply of endless pumpkin pancakes? These just make you feel warm and cozy! I love them!
Pumpkin Pie Pancakes
1 cup flour
1 tsp baking powder
1 tsp baking soda
1 TBSP pumpkin pie spice
1/2 tsp salt
2 TBSP sugar
1 cup buttermilk
1/2 cup canned pumpkin(if you don't have pumpkin spice you can use pumpkin pie pumpkin)
2 large eggs
1/4 cup oil
1 tsp vanilla
1/2 cup( or more) chopped pecans
Whisk together flour, baking powder, baking soda, pumpkin spice, salt, and sugar. Whisk in buttermilk, pumpkin, eggs, oil and vanilla. Blend well. Add pecans Heat griddle over medium heat spray with pam. Pour batter by 1/3 cupfuls on griddle. cook till bubbly and golden brown on bottom and flip over and cook on other side till golden brown. serve with syrup! YUM!!
