Tasty Tuesday~ Velvetta What??

When we ordered our years supply of Velveeta Cheese and it was shipped, it arrived in Galena busted open. Then Keith called Walmart and told them it was all busted open when it arrived so they shipped another supply to us. When the second batch arrived it was ALL busted open too. (Note to self: Velveeta doesn't ship well through the Galena mail system.) So now I have 2 years supply of Velveeta? What do you do with 2 years supply of Velveeta that is ALL opened? Well You use it! Besides grilled cheese sandwiches I have 2 recipes that I absolutely LOVE!

 The first is recipe I got from my friend Connie Moos. It is a wonderful easy recipe and it is delicious! My mom used to make a great Chicken & Rice but I don't remember it being like this. NO offense mom. =) I love this recipes and it freezes well so I can make a double batch and freeze one dish.

Creamy Chicken & Rice
3 cups cooked rice
1/2 cup margarine divided
1/4 cup flour
2 cups milk
2 teaspoon chicken bouillon granules
1 teaspoon Seasoned salt
1/2 teaspoon garlic
1/4 tsp pepper
4 cups cubed cooked chicken
12 ounces Velveeta
2 cups sour cream
1 1/4 cup crushed Ritz crackers

Spread cooked rice in to greased 13X9 baking dish.
In a saucepan melt 1/4 cup butter; stir in flour until smooth. Gradually add milk, bouillon, seasoned salt, garlic, pepper. Bring to a boil; cook and stir for 2 minutes until thickened and bubbly. Reduce heat. Add cheese, sour cream and chicken; stir till cheese is melted. pour over rice. Melt remaining butter, toss with cracker crumbs. Sprinkle over casserole. Bake uncovered at 425 degrees for 10-15 minutes till heated through.   Enjoy!

The other recipe I got from Paula Dean! What does she make that is not yummy? I can't stand her accent but I love her recipes and this one is no different. When I tell you what it is you will probably say gross but don't say that till you try it!! YOU WILL BE SURPRISED! I was! Can you guess what I made out of Velveeta?...........FUDGE! YES Velveeta fudge! Don't judge it till you try it! Let me tell you a story of me making this recipe. I made it with hesitation.... a BIG HESITATION! I was a bit worried it would not be good at all. But I made it anyways. I was deliciously amazed that I made this recipe out of Velveeta. I even made Rocky Road with marshmallows and nuts. I then put it out on a plate and let people try it. I first let Keith eat it. He ate one piece and went back for 2 more pieces. Then I asked him if he new what the main ingredient was in the fudge. He guessed the usual options like sugar, cocoa, milk.... but he never guessed Velveeta. Then he took another piece and tried to dissect the piece to look for it. He was amazed. We then took a plate of fudge to his work and took it around to people. They oohed and awwed about how yummy and creamy it was. I then told them I would give them $50 if they could guess what the main ingredient was in the fudge. Again the usual guesses were given but when I actually told people what it was they could not believe it! The fudge was gone quickly. Trust me this fudge is delicious. Creamy and Delicious! Try it and then ask your friends to try it. No one will guess what you made it from. DELICIOUS

Velveeta Fudge
1/2 lb Velveeta
1 cup butter
1 tsp vanilla
1 cup chopped nuts
2 (16 oz) box powder sugar(8 cups)
1/2 cup cocoa powder

In a saucepan over medium heat, melt cheese and butter together. Stir continuously till smooth. Remove from heat add nuts and Vanilla. In a large bowl sift together powder sugar and Cocoa. Pour cheese into sugar and stir well. Will be stiff. Press evenly into greased 9x13 pan.
~ I added Marshmallow and made it a Rocky road flavor... Place in Refrigerator to firm up. Store in an air tight container in refrigerator. Enjoy!

  1. Tabitha, we used to make a variation of the chicken and rice dish. It was probably high sodium, since it had cream of chicken soup and cheddar cheese soup in it. It also had fresh or frozen broccolli. I will have to try your recipes --- esp. the Velveeta fudge.
