This weeks recipe is one of my favorite cakes, but more important is it one of my Granddads favorite cakes. And since they decided to celebrate their 60TH!!! Let me say that again 60th Wedding Anniversary by taking a trip to Alaska to visit with their FAVORITE(shhhh...don't tell my brother) grand-kid. How special for us to be able to celebrate with them. 60 years!! As my mom would say they are one of the statistics. And they are! I am glad God put me in their family. They are so special to me! I love you Grandma and Granddad! HAPPY 60TH ANNIVERSARY!!

I made this cake and decorated it with flowers from the garden.... I can never say or spell them right so I won't try... But aren't they pretty?
OK There is a story behind this recipe. It is called at least in our family the No Name Cake. This cake recipe was put out by some company and there was a search for a name for it. People were to bake the cake and send in their ideas for names. Well We have never figured out what name was ever picked so in our books it remains the No Name Cake. But even with out a name it is DELICIOUS! I love the flavor of Chocolate with cinnamon and coffee. And for me to say i like the flavor of Coffee is amazing. I don't like coffee at all! It really is delicious!
Grandma's No Named Cake
3/4 cup shortening
1 1/2 cup sugar
3 eggs
1 3/4 cup flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp salt
3/4 tsp nutmeg
1 tsp cinnamon
2 TBSP cocoa
3/4 cup buttermilk
1 tsp vanilla
1 tsp lemon extract
1/2 cup chopped pecans
Preheat Oven 350. Mix shortening, sugar, and eggs. Mix together dry ingredients then mix into egg mixture alternating with buttermilk. Add rest of ingredients. Mix well. Bake in a greased 9X13 pan for about 30 minutes. Cool completely before adding Icing.
For Frosting:
6 TBSP Butter
1 egg yolk
3 cups Powder sugar
1 1/2 TBSP cocoa
1 tsp cinnamon
1 1/2 TBSP Hot coffee
Cream together butter and egg. then add rest of the ingredients and mix well. Spread on cooled cake.
