Moose Curry

Tonight I was blessed with 19 people eating around my dinner table, around my living room, on the floor and in my kitchen. With 19 people, you eat where ever you find room! But it was fun and thankfully delicious. Last September, I posted about 4 guys that came up from Louisiana, on a mission trip, and they spent a week cutting moose meat up. Any of you that don't know moose are HUGE and it takes a LONGGGGGG time to cut up a moose! Anyways! Those 4 guys must have thought it was fun and told their church about Galena and they sent those 4 guys + 6 more people out here this week. This weeks mission is to help people gather fire wood for next winter. The 3 ladies are cooking and helping around town with other projects. I was so excited that we were going to be here part of the time that the team was here. Last year we had such a good time with Carey, Nathan, Stephen, and Wade and I am so glad we got to have them over for dinner while they were all here. Last year, I made Moose Curry and cranberry scone, and the guys raved about it, so much so that when they all got here they made sure I was making moose curry for them again. EVERYONE in their group was expecting great curry which made me a little nervous. I was hoping my cooking could live up to their memory. I hope it did! After dinner everyone was asking for the recipe so I am now posting my Moose Curry Recipe.... Which technically is my mom's recipe but since my mom doesn't have moose I call it mine. =) hehehehe. So in Honor of the Louisiana Mission team .......
Tabby's Moose Curry(this is NOT a spicy HOT curry)
1-2 pounds cubed meat
2 Tablespoon butter or Oil
1 Chopped Onion
1 Chopped Apple
1 Chopped Bell Pepper
3 Tablespoon flour
2 teaspoon curry powder
2 teaspoon salt
2 cups Beef Bouillon Cube or beef broth
6 Tablespoon Sour Cream or yogurt
2 Tablespoon Lemon juice
1 clove garlic crushed
1/3 cup Raisins... I don't like raisins so I used dried cranberries
1/4 cup sliced almonds

Cook meat in butter till brown on all sides
Add onion, pepper, and Apples and cook for 5 minutes
Add Flour, curry powder, and salt. Mix well
Slowly add Beef broth and cook till thickened, stir constantly
Add Lemon juice, garlic, Raisins and Almonds
Cover and simmer for 1 hour
Stir occasionally
Add Sour cream and heat
serve over rice with any accompaniments: Tomato wedges,Pineapple chunks, Coconut, Raisins, Craisins, peanuts, olives, avocado, green onion, bananas or anything else you like.
